Morrocan Meatball Recipe

For all those people who come here looking for this recipe…

Ingredients

2 x tablespons Oil
1 x Onion
1 x Clove Garlic (crushed)
1 x teaspoon Cumin Powder
1 x teaspoon Paprika Powder
1lb (450g) Lean Minced Lamb
1 x tin Chopped Tomatoes
1/2 pint Vegetable Stock
1 x Lemon – grated zest
1/2 bunch fresh Coriander – chopped

Method

1. Heat oil in a pan and fry the chopped onion and crushed garlic for 4 minutes

2. Stir in the cumin, coriander and paprika and cook for a further 1 minute

3. Cool, then mix half with the minced lamb, season and shape into 24 meatballs

4. Heat 2 tablespoons of oil in a pan and fry in batches until browned. Set aside.

5. Add the rest of the onion mix to the pan with the chopped tomatoes and vegetable stock. Mix together.

6. Return the meatballs to the pan and simmer for 30 minutes.

7. Stir in the grated lemon zest and some fresh coriander.

8. Serve with cous cous.
